Smokey TLT (Tempeh, Lettuce & Tomato) Sandwich
Ingredients
(Makes 4 Sandwiches)
8oz Smokey Bacon Tempeh (or follow a recipe like THIS if using plain tempeh)
1-2 Beefsteak Tomatoes
1/2 Head of Iceburg Lettuce
8 Slices of Your Favorite Bread, Toasted (Sourdough is my favorite)
Mayonaise (1-2 Tablespoons per sandwich)
Directions
Slice the "smokey bacon" tempeh into thin strips (~1/8-1/4" thick), unless they come pre-cut.
Bake your tempeh at 350 degrees for 35-40 minutes. (Plan on marinating for 20 minutes if using plain tempeh and following the linked recipe above.)
Slice the tomatoes. Then wash and cut or tear the lettuce into 1-2 bread sized pieces.
Toast your bread when about 5 minutes is left on the tempeh.
Assemble the sandwich. Start by spreading mayo on each slice of bread. Top with 1-2 tomato slices, 4-6 strips of tempeh and the lettuce. Enjoy!
